Leftovers should be refrigerated in an airtight container, and your refrigerator should be set no higher than 40F.

But refrigerate within one hour if the temperature where the food has been sitting is above 90F.

Safe ways to thaw leftovers include the refrigerator, cold water, and the microwave oven, explains Turney.

Foods thawed by the cold water method should always be cooked before refreezing.

Continue to heat leftovers until they reach 165F as measured with a food thermometer, Turney adds.
